Ingredients
2 lb. pork tenderloin
1 cup pineapple chunks, fresh or frozen
1 cup diced mango, fresh or frozen
18 oz. barbeque sauce
1 ¼ cup pineapple juice
1 tsp. salt
½ tsp. black pepper
Directions
Cut pork into large chunks about 3-4” pieces and place in base of Microwave Pressure Cooker.
Add remaining ingredients and mix to combine. Cover and lock in place.
Microwave on high power for 30 minutes.
At the end of cooking time let pressure release naturally. Shred and serve as desired.
